-500g/17oz Oyster mushrooms
-Olive oil
-Salt and pepper
-Chopped garlic
-Chopped parsley
Heat the grill. Place the whole mushrooms, with the gills (a series of radially arranged flat surfaces) facing down. Sprinkle salt and pepper. When the mushrooms are golden brown, turn them over and brush the gills with the mixture of olive oil, garlic and parsley. Serve them golden brown on a slice of toast.
