-500g/17oz Oyster mushrooms
-300g/10oz king prawns
-50g/1,7oz butter
-3 tbsp. cream
-salt
-a bunch of chives
Slice the mushrooms. Heat the butter in a pan and add the mushrooms. Cook them until all their liquid has evaporated. Remove the shells of the prawns and add them.
Whisk the cream and eggs, and then pour this mixture over the mushrooms and the prawns. Season with salt and let the eggs curdle.
The dish should not turn out dry. It needs to be a little moist. Sprinkle some chopped chives before serving.
Note: You can fry the mushrooms with rashers of bacon.
