Oyster mushroom Spanish Omelette

Ingredients

-4 Oyster mushrooms
-1onion
-200g/7oz smoked bacon
-2 boiled medium potatoes
-4 eggs
-Salt and pepper
-Oil

Preparation:

Heat the oil in a pan. Chop the bacon and sauté it with the onion. Slice the mushrooms and add them. Then, cube the boiled potatoes and add them, too. In a bowl, whisk the eggs and season with salt and pepper. Add the cooked mushrooms, bacon and onion to the egg mixture. Heat oil in an omelette pan and pour everything in. Cook as a pancake turning once.
